Mexican Black Bean Omlette
2 whole eggs
Mexican style refried black beans from the Mexican Fiesta Day episode
1/4 red onion chopped
1/4 cup frozen bell peppers chopped
1/4 cup Daiya pepper jack shreds
Ghee or Earth Balance Spread
1 kiwi sliced
Wisk eggs together in a bowl until bubbly, and set aside
Saute onion and peppers together in a skillet with Ghee or Earth Balance spread for about 2- 3 minutes.
Add black beans, saute for one more minute. Add eggs and sprinkle with Daiya cheese shreds. Let it spread to edges of the skillet and cook until formed into a pancake. With a non- stick spatula, lift & fold. Enjoy!
