Peanut Butter Chocolate Mousse Parfait




I don’t know about you but I love a good peanut butter/ chocolate combo dessert… It’s my favorite! This amazingly easy and delicious desert also happens to be healthy.. yep, I said healthy! 🙌🏼 My daughter says it tastes like ice cream, so you know it’s good!😄



Ingredients:


Peanut Butter Mousse layer

  • 1 can unsweetened whole coconut milk, (use only the solid coconut cream, not the liquid) refrigerated for 24 hours.

  • 2- 3 Tablespoons Creamy Natural Peanut butter (No additives, just peanuts and salt) 

  • 2 Tablespoons Pure Maple Syrup (Dark)

  • 1 tspn pure Bourbon Vanilla extract


Chocolate Mousse Layer

  • 1 can unsweetened whole coconut milk (use only the solid cream, not the liquid)

  • 1/3 cup refined sugar- free chocolate chips (I use Hu gems. They’re organic and sweetened with coconut sugar)

  • 1 teaspoon pure Bourbon vanilla extract


DIRECTIONS:

Create a double boiler using a stainless steel bowl over a pot of simmering hot water. Heat the chocolate chips until just melted, then stir in the room temperature coconut cream, and incorporate well until the mixture looks like hot cocoa. Remove from heat and stir in the vanilla extract. This bowl will need to chill in your refrigerator for a few hours (or less in the freezer) until the mixture is solid.  Next, take your refrigerated coconut milk can and spoon the cream into a deep bowl, and discard the liquid. Add peanut butter and maple syrup and whip into a cream on low/medium using a handheld mixer.  Lastly, add in the vanilla extract and blend for a few more seconds. This will look like a whipped cream. Refrigerate the peanut butter mousse until the chocolate mousse mixture is just solid. Now, take your chocolate coconut mixture out of the fridge or freezer (first making sure it’s firm) and whip into a mousse using the hand mixer on low/medium.  Grab a few beautiful glasses and layer the bottoms with the chocolate mousse. I simply use a spoon but you can fill a piping bag with it to make it extra fancy. Next, add the peanut butter mousse on top. Drizzle on some extra peanut butter over the top, and sprinkle on some cacao nibs. Voilá, chocolate peanut butter parfait👌🏼
